Meet Karen!

Born and raised in Portland, Oregon, Karen McRae boasts an extensive career spanning over two decades in the food and beverage sector. Her expertise covers a range of areas, from food service and special events to sales and marketing. Karen has also devoted over seven years specifically to the seafood industry, in both wholesale and retail sales with a focus on sustainable practices.


Although her initial vision was to launch a seafood market and oyster bar, the COVID-19 pandemic created a sudden roadblock. Undeterred, Karen realized an even more unique opportunity in the way of oysters from a food cart. Determined to carry out her lifelong passion for creating delicious food, and along with her entrepreneurial drive, Mother Shuckers Food cart was born.


Launched on October 26, 2022, Mother Shuckers found its home at The Podski Food Cart lot in the Bend, OR Old Mill District. This innovative food cart allowed Karen to continue doing what she loves most—cooking her favorite foods for others—while also fulfilling her entrepreneurial ambitions, with plans to launch additional visions in the future.
